We're thrilled to share some news that fills us with pride and happiness: our Classic Colomba has been awarded the best in the Gambero Rosso Colomba 2024 selection!

This victory is not only a recognition of the unique flavor and quality of our Colomba, but also of the hard work, passion, and commitment we put into our work every day. It's an honor to receive this recognition, especially considering the words Gambero Rosso dedicated to us:

Following the teachings of Maestro Morandin, the Foggia-born pastry chef, who has already won several national competitions for his leavened products, continues his ascent. His Colomba is beautiful to look at and technically flawless: divinely risen, with the regularity of a vaulted ceiling, 'napped' with an impeccable biscuit-colored glaze, compact and rich in sprinkles. The bright yellow slice displays a mixed, pronounced and exuberant eye, thickened with vanilla (but less so with candied fruit). Smell and palate meld together on the effusions of an engaging bouquet, a composition of milky, citrus, fruity, and slightly vanilla notes, with youthful tones and a springtime echo.

Our Classic Colomba is the result of meticulous and dedicated workmanship, a 72-hour process and a 36-hour leavening period, which gives it an incomparable softness, just the right amount of moistness, and a melt-in-the-mouth texture. Enriched with exquisite almonds and tender, fragrant candied orange peel, it is a true masterpiece of balance and elegance.
