We're delighted to update you on this new achievement. Dissapore's 30 Best Artisanal Panettone of 2023 ranks us among the top 30 artisanal panettone of 2023. This achievement follows Gambero Rosso's ranking as one of the top 10 artisanal panettone in Italy.
A good panettone doesn't happen by chance. It's not the fruit of a fortuitous day in the lab or a borrowed recipe. Just as you don't reach the summit of Everest without training.
Here's an excerpt from the Dissapore article: during the 2023 tasting panel, held in the classrooms of the Mercato Centrale Torino, we couldn't help but notice a lack of suspensions—namely, candied fruit and raisins—and were instead delighted by the new talent poised for the spotlight: leavening experts capable of competing with the masters of leavening. We literally "discovered" these talents, cross-referencing the tasting codes with the artisans' software from our technical partner, Thimus, with considerable surprise.
